El 'master of wine' francés afincado en Reino Unido Gerard Basset.

 

Es el único profesional del vino que combina los títulos de Master of Wine, Master Sommelier, Mejor Sumiller del Mundo, OBE (Oficial de la Orden del Imperio Británico) y Wine MBA. Sus logros imponen, es el superman del vino, imbatible. Pero como todo héroe, tiene su lado más tierno, y es que Gerard Basset es una persona humilde, afable y accesible. “Ser sumiller es un trabajo, no una cualificación”, afirma el único sumiller que ha sido nombrado Hombre del Año 2013 por la prestigiosa revista británica Decanter. Para llegar a los más altos niveles en sumillería se preparó con un entrenador personal durante años, fue a clases de interpretación, entrenó metódicamente su memoria, trabajó en varios restaurantes sin cobrar y aprendió técnicas de venta y contabilidad.
Nacido en 1957 en Saint Etienne (Francia), en la década de los ochenta Basset se trasladó al Reino Unido y allí inició su carrera como sumiller. Socio fundador del Hotel du Vin durante diez años, en 2007 decidió abrir su hotel-boutique de vinos TerraVina (New Forest, Southampton) junto con su esposa Nina y en donde, “no sale un plato si el vino no está listo, ambos tienen que ir de la mano”.
Basset fue uno de los ponentes de la segunda edición del foro internacional Wine&Culinary, organizado por Bodegas Torres en Barcelona, donde impartió una charla sobre psicología y formación del sumiller. Una lección magistral para los actuales y futuros profesionales. “Un sumiller debe entender la psicología de los clientes porque hay que reconocer que algunos saben más que un sumiller y otros están perdidos”, asegura el autor de The wine experience. Sobre las cualidades de un buen profesional, Gerard Basset piensa que el sumiller es “también un vendedor”, debe adaptarse a la comida, a un presupuesto y saber cuánto quiere gastarse un cliente.
Pregunta. Empezó como cocinero, ¿cuándo sintió la llamada del vino?
Respuesta. Empecé como chef, pero estaba más interesado en estar con la gente. Por tanto, después de mi tiempo en la cocina, trabajé en el restaurante y me di cuenta de que necesitaba saber de vinos. Estudié sobre vinos pero nunca me imaginé que iba a especializarme en ello. Eso pasa por las circunstancias, entré por casualidad en un concurso de sumilleres, lo hice bastante bien y me enamoré del vino.

P. Una de sus pasiones es la formación y entrena a muchos sumilleres, ¿cuál es su método de trabajo?
R. Me gusta trabajar en el aspecto mental de ganar y no sólo el aspecto técnico de vino. La formación de personas es muy gratificante. Se les ve trabajando y mejorando, y cuando alcanzan sus logros es una gran sensación.
P. La imagen del sumiller vanidoso y altivo no ayuda mucho a la profesión…
R. Puedo entender que la gente tenga esta imagen porque yo mismo he experimentado este trato en algunos restaurantes de algunos sumilleres arrogantes. Afortunadamente, eso está cambiando y ahora hay algunos grandes sumilleres jóvenes, y frecuentemente mujeres, que tienen una actitud muy positiva.
P. Ahora los chefs son estrellas mediáticas, ¿qué cree que sucede en el mundo del para que no llegue a ser tan popular?
R. Creo que los cocineros son estrellas porque la cocina funciona bien en la televisión. El vino es más complicado pero esto puede cambiar, y yo tengo algunas ideas. La única cuestión es encontrar productores de televisión listos para trabajar con mis ideas.
P. Si le dicen vinos de España, ¿cuál es la primera palabra en la que piensa?
R. Pienso en Rioja y Jerez como los vinos españoles que probé por primera vez. Sin embargo, también me encantan los vinos de Ribera del Duero y muchas otras regiones vinícolas españolas.
P. ¿Cuál es su armonía favorita de comida y vino español?
R. Yo no soy complicado en esto y me encantan los productos simples pero de alta calidad. Por lo tanto, mi maridaje favorito probablemente sería uno de vuestros jamones fabulosos con una copa de jerez.
P. Con todos sus títulos parece el superman del vino, ¿cuál es su kryptonita?
R. Me gustaría ser Superman-Wine, pero no lo soy. Mi kryptonita es que soy muy tímido y en ocasiones esto puede hacer que pierda la confianza y no cumplir bien con mi trabajo, pero por favor, no se lo digas Lex Luthor.

Tendencias internacionales que marcarán el mercado del vino en 2015

Jürgen Mathäßes, periodista especializado en vino, nos desvela en este artículo algunas de las tendencias que marcarán el mercado del vino en el año que estamos a punto de iniciar La demanda mundial se mantiene estable y crecen los vinos de zonas climáticas frescas El consumo de vino en los países productores tradicionales tiende a reducirse pero, sobre todo en Asia y Norteamérica, el vino va ganando cada vez más adeptos. Además, se consolida la tendencia hacia la viticultura sostenible y los vinos de climas más frescos gana terreno. Por su parte, cada vez más viticultores se animan a experimentar con “vino natural” sin sulfitos y vinos fermentados en ánforas de barro. Y todo ello con una vendimia 2014 que puede cubrir el consumo mundial y la demanda de vinos destinados a la transformación. Desde el 2005, la cantidad de vino importado y exportado a nivel mundial aumentó de 72 millones de hectolitros a los 99 millones de hectolitros del año pasado. Esto equivale al 40% del consumo global de vino que, con pequeñas fluctuaciones, se mantiene relativamente estable en unos 240 millones de hectolitros. Sin embargo, tal como constata la Organización Internacional de la Viña y el Vino – OIV en su último informe de mercado, existen considerables movimientos dentro de los países consumidores. Mientras el consumo se fue reduciendo en Francia, China, Italia, Australia y Austria, aumentó en EE.UU., Alemania y Grecia. EE.UU. es ya el mayor mercado de consumo del mundo, con con 29 millones de hectolitros EE.UU. es, por primera vez, el mayor consumidor de vino En el año 2013, con 29 millones de hectolitros, los EE.UU. se convirtieron, por primera vez, en el mayor mercado de consumo del mundo, sobre todo porque se mantiene el fuerte descenso del consumo en Francia (28 millones de hectolitros). En tercer y cuarto lugar les siguen Italia (22 millones de hectolitros), con un consumo igualmente en descenso, y Alemania (20 millones de hectolitros), con un ligero aumento. China (17 millones de hectolitros) mantiene el quinto lugar, aunque el rápido crecimiento de los años anteriores se haya ralentizado, posiblemente influido por la campaña gubernamental contra la corrupción. No obstante, un pronóstico de Euromonitor indica que, en el año 2017, China ya podría ser el mayor mercado de vino del mundo. Mientras en Francia, Italia y China se beben sobre todo vinos autóctonos, los TOP 3 de los países consumidores son, al mismo tiempo, dos de los tres principales países de importación de vino del mundo. Al igual que en los años anteriores, los mayores importadores de vino y, en consecuencia, los países de consumo más importantes en el comercio mundial, fueron Alemania (15 millones de hectolitros), por delante de Gran Bretaña (13 millones de hectolitros) y EE.UU. (11 millones de hectolitros). En EE.UU. muchos productores ven todavía un considerable potencial de crecimiento, ya que el consumo per cápita, relativamente reducido, sigue aumentando. La sostenibilidad y los vinos de climas frescos ganan protagonismo Independientemente de estos cambios a nivel de las cantidades consumidas y comercializadas, algunas tendencias en el ámbito de la viticultura internacional se mantienen vigentes, independientemente del país. Hace mucho que la viticultura ecológicamente consciente y sostenible ha dejado de ser un nicho de mercado. Las asociaciones de viticultura de países enteros, tales como Sudáfrica, Chile y Nueva Zelanda, o regiones como California, han ido desarrollando continuamente sus programas de sostenibilidad. En España, Italia y Francia ya se cuentan cerca de 200.000 hectáreas de viñedos de cultivo ecológico. Mientras en Europa se priman unas reglas bastante estrictas y definidas internacionalmente para la producción ecológica, los países extraeuropeos tienden hacia un concepto global que incluye, además de la viticultura, los aspectos sociales del trato del personal y del comercio justo. Para el mayor productor biodinámico del mundo, la bodega chilena Emiliana, el cambio tuvo también motivos de calidad, tal como solía resaltar frecuentemente su CEO José Guilisasti, recientemente fallecido: “Creemos que la producción sostenible y biodinámica es un requisito para tener unos viñedos que se encuentran en un equilibrio natural, lo cual se manifiesta en una mejor calidad de la uva y en mejores vinos.” Una parte pequeña, pero creciente, de productores del mundo entero va un paso más allá y busca el sabor original de unos vinos naturales, opuesto a los métodos industriales en la viticultura y la producción de vino. Algunos productores experimentan con la maceración en vinos blancos, la fermentación y el almacenamiento en ánforas de barro y la supresión del uso de sulfitos. Sin embargo, mientras estos métodos se utilicen de forma más bien aislada, se mantiene a nivel internacional la tendencia hacia vinos frescos con poco contenido alcohólico, procedentes de zonas más frescas. Sobre todo en el contexto del temido cambio climático, se procede en muchos países a plantar nuevos viñedos a mayor altitud. El pionero español de la viticultura, Miguel Torres, ha plantado viñedos al pie de los Pirineos a una altitud de 1200 m. “Se trata de una especie de seguro climático”, comenta al respecto. Con 271 millones de hectolitros, la producción global de vino en 2014 ha sido ligeramente inferior a la del año anterior Vendimia de 2014, algo inferior a la del año anterior Con 271 millones de hectolitros, la producción global de vino fue ligeramente inferior a la del año anterior. También en este caso ha fluctuado el peso dentro de los grandes países productores (las siguientes cifras de la cosecha se basan en estimaciones de OIV). Italia es, con 20,4 millones de hectolitros, el mayor exportador de vino del mundo, pero a la vista de la cosecha reducida de 2014 (44 millones de hectolitros) no puede mantener su posición como mayor productor de viña. Los observadores del mercado prevén un aumento de los precios que afectará, sobre todo, al mayor cliente, Alemania. Alexander Hofer, del Gruppo Italiano Vini, considera a China y Rusia como los principales mercados de crecimiento para vinos italianos. Con 46 millones de hectolitros de vino, Francia es en 2014 el mayor productor de vino del mundo, pero registra un descenso en la exportación a China. Un “plan de acción 2015″ aspira a conseguir mejoras adicionales a nivel de la producción, del capital humano y del marketing, y recoge en creciente medida la tendencia hacia los temas sociales y de sostenibilidad. Por su parte, España tiene la mayor superficie de viñedos de todos los países productores de vino (1,08 millones de hectáreas), pero la cosecha, con aproximadamente 37 millones de hectolitros, ha sido claramente inferior a la del año anterior. Los intensos esfuerzos de exportación permiten a los productores compensar el descenso continuo del consumo interior en los últimos años. Dos tercios de la exportación española corresponde a vinos en barrica. Se mantiene la tendencia al aumento de la producción ecológica y al uso de variedades autóctonas, tales como Garnacha y Monastrell. Entre los países productores más pequeños, Alemania ha vuelto a cosechar una cantidad normal con 9,3 millones de hectolitros. A nivel de la exportación, ya hace varios años que los alemanes están consiguiendo un aumento del precio medio. La tendencia hacia vinos de alta calidad de procedencias definidas al detalle. Por su parte, la venta de vinos griegos se está beneficiando de una clara reactivación del turismo en Grecia. Por contra, Portugal no logra alcanzar el volumen de exportación del año anterior por lo que no es probable que se repitan los suministros extraordinarios de vino en barrica a España y Francia. A nivel general, los países productores y consumidores extraeuropeos están ganando en importancia. El año pasado, Chile sustituyó a Australia como cuarto mayor exportador de vino del mundo. Argentina, que cosechó en 2014 unos 15 millones de hectolitros (sin zumo ni mosto), sigue sufriendo imposiciones burocráticas a nivel de la exportación. Sin embargo, queda manifiesta la fuerte tendencia hacia la calidad en la producción con vinos de viñedos selectos. Aunque la producción internacional de vino en 2014 no alcanzó del todo el nivel del año anterior, la cantidad disponible es superior al consumo mundial, de manera que también se dispone de suficiente vino destinado a la transformación. Ya hace tiempo que Malbec de Argentina se ha convertido en parte imprescindible de la oferta en mercados como EE.UU. y Canadá. Sudáfrica (cosecha de 11,4 millones de hectolitros, incl. zumo, concentrados, etc.) sigue teniendo mucho éxito en la exportación. Siobhan Thompson, CEO de la organización de exportación WOSA, resalta las nuevas pautas para el futuro: “Exportamos más de dos tercios de nuestras ventas al extranjero a mercados saturados de Europa. En el futuro tenemos que mirar más en dirección a EE.UU. y al Extremo Oriente.” A pesar del descenso de la superficie de cultivo dedicada a viñedos, Australia cosechó, con 12,6 millones de hectolitros, un poco más que en el año anterior y presentará próximamente un plan quinquenal para mejorar su posición en el mercado internacional. Nueva Zelanda ha alcanzado una cosecha récord de 3,2 millones de hectolitros (+29%), que permite al país satisfacer la creciente demanda. El sector vinícola neozelandés, que concede una importancia especial a la producción sostenible, quiere aumentar su volumen de exportación en los próximos años un 50 % a 2.000 millones de dólares neozelandeses. Aunque la producción internacional de vino en 2014 no alcanzó del todo el nivel del año anterior, la cantidad disponible es superior al consumo mundial, de manera que también se dispone de suficiente vino destinado a la transformación. En total, la añada de 2014 podrá cubrir el año próximo la demanda mundial, según declaró el gerente de OIV, Jean-Marie Aurand, al presentar las cifras de cosecha. Rías Baixas ya tiene entre sus manos una propuesta de nombre para sus espumosos

El pontevedrés Antonio Domíguez Pérez ha sido el ganador del concurso para elegir un nombre y una imagen de marca para los vinos espumosos de la DO Rías Baixas. Por el momento no se han dado más detalles porque la última decisión ha de ser tomada en el seno del consejo regulador de la denominación.
Este tipo de elaboraciones necesitan urgentemente de un nombre así como el que tienen otros espumosos del mundo, como el champagne, para seguir creciendo en los mercados. Es un producto relativamente nuevo en el sello de calidad, lleva un par de años a la venta, pero los resultados están siendo positivos y se hace preciso una imagen propia que los identifique frente a otros.
Por este motivo la Diputación de Pontevedra en colaboración con el Consejo Regulador de Rías Baixas puso en marcha este certamen dotado con un único primer premio de 5.000 euros en metálico. El jurado emitió ayer su veredicto después de examinar las 127 propuestas recibidas procedentes de empresas de diseño, imagen, publicidad y marketing de dentro y fuera de Galicia. Sus miembros eran técnicos de la institución provincial, de la denominación y de la Universidade de Vigo.
Su decisión fue elegir la idea del vecino de Tui Antonio Domínguez Pérez que se presentó bajo el pseudónimo de “Sentido Atlántico”. Según fuentes de la Diputación, ya se ha presentado la imagen de marca y el nombre diseñados por él al Consejo Regulador para que sea consensuado.
Las primeras botellas de espumosos de Rías Baixas se comercializaron en 2012 y la respuesta de los mercados está siendo satisfactoria. Según datos oficiales, ese año se certificaron unos 18.000 litros que en 2013 ya habían subido a los 70.000, procedentes de las nueve marcas existentes, pertenecientes a seis bodegas. Sin embargo, el último informe realizado por la Escola de Negocios de la Fundación Novacaixagalicia –ahora Abanca– para el Consejo incidía en la necesidad de encontrarle un nombre para mejorar su posición comercial. La mayoría de marcas existentes son elaboradas con la variedad albariño, pero también hay espumosos tintos, monovarietales o plurivarietales, si bien todos son elaborados exclusivamente a partir de variedades autóctonas y acabados por segunda fermentación en botella, siguiendo el método Champenoise, tal y como indica el reglamento aprobado para su elaboración al amparo de este sello de calidad.
