Lo que en agosto se anunció como 10.000 botellas se ha quedado definitivamente en 8.807: ésa es la magnífica bodega de elBulli que la casa Sotheby's va a subastar en abril próximo en Hong Kong y Nueva York, y con la que se espera recolectar más de un millón de dólares a beneficio de la elBulliFoundation, la fundación para la investigación del gusto y de la creación culinaria fundada por Ferran Adrià y Juli Soler tras el cierre en 2011 del que fuese considerado mejor restaurante del mundo.
Las fechas de la venta serán el 3 de abril en Hong Kong y el 26 de ese mes en Nueva York, según anunció Sotheby's esta semana. También hizo público un mensaje de Adriá en el que la describe como "excepcional, única", añadiendo que tras la puesta en marcha de la fundación, "decidimos que esta colección muy especial y personal debía emplearse para hacer una contribución inicial que ayudase a que el lanzamiento de elBulliFoundation fuese un éxito".


La directora del departamento de vinos de Sotheby's, Serena Sutcliffe, será la encargada de dirigir las subastas.


Fue Juli Soler el que creó y nutrió a partir de 1981 esta bodega junto a los sucesivos sumilleres de la casa: Agustí Peris, Eloy Sánchez, Isabelle Brunet, Lucas Payà, David Seijas y Ferran Centelles.


Entre lo más interesante que se va a subastar están unas 2.000 botellas de vinos españoles, entre ellos varias botellas de seis añadas de Vega Sicilia Único (entre 1987 y 1996) y de 10 añadas de Torres Mas La Plana. Además, 415 botellas de diferentes añadas de Château de Beaucastel, cajas completas de botellas y mágnums de Château Latour 2005, y vinos del Domaine de la Romanée-Conti, incluidas varias botellas de Romanée-Conti 1999, estimadas en 5.350 euros por botella, y un lote de tres de Romanée-Conti 1990, estimado entre 25.000 y 36.500 euros.


Entre los vinos blancos destacan botellas de Montrachet DRC, pero también vinos más inesperados: tintos suizos, moscateles de la isla de Samos, jereces, oportos, tokajis y 'icewines' canadienses.


Se ha anunciado también el lanzamiento del nuevo sitio de internet Bullipedia, que informará sobre todos los trabajos de la fundación.


Serena Sutcliffe se ha deshecho en alabanzas y emocionados recuerdos de lo que fue comer en elBulli, con "sorpresa, placer y alegría en cada plato, una incesante procesión mágica". Y añadía: "El ingrediente extra en esas comidas fue la armonización intuitiva de esas creaciones con la tentadora, y fenomenalmente interesante, carta de vinos. Estamos encantados de poder subastar estos vinos para que los coleccionistas de todo el mundo puedan compartir el encanto de elBulli".


Y el caso es que Ferran Adrià siempre confesó que él no pensaba nunca en la armonía con el vino cuando creaba un plato... Pero Soler y sus sumilleres se encargaron de ello.
