It's not easy to find this Italian restaurant, hidden behind a garden wall just a few blocks from the crowds on Lincoln Road. But diners who step through the gate with the tiny sign will find themselves in an oasis. Housed in a 1925 mansion-turned-hotel, Casa Tua feels like an upscale Italian country restaurant, with Mediterranean-style rooms and a garden of old trees bedecked with lanterns and air plants.
The cuisine is refined Italian, with plenty of local seafood. It's not cutting edge, just well done. Zucchini blossoms stuffed with ricotta and speck are lightly fried, while the pappardelle with lamb ragù and pistachios is deeply flavorful. Seared branzino paired with asparagus, roasted tomatoes and mushrooms is earthy and rich. The wine list, a Wine Spectator Best of Award of Excellence winner, is packed with the stars of Italy, from Domenico Clerico to Fattoria di Felsina. And then there's the reserve list. But you can also find affordable discoveries such as Occhipinti SP68 2010 ($62), a blend of Nero d'Avola and Frappato from Sicily.

Opening a restaurant in Miami was a no-brainer for New York chef Andrew Carmellini: His father grew up in Miami, and he still has family in the area. But while Carmellini initially thought he would export his Italian food south, the W South Beach Hotel asked instead for the Dutch, his more casual, "roots-inspired" American eatery.
The Dutch adds a nice touch of casual comfort to the sleek hotel, with its white-brick walls, industrial-style lighting and shelves full of pickle jars. The menu is also comfortable, but with smart flourishes. Octopus à la barça features slow-cooked legs seasoned with spicy paprika and roasted peppers. Even tastier is a grouper sandwich on the lunch menu, boasting a hefty piece of fillet and smoky aioli. The wine list shows good depth, and decent pricing for a South Beach hotel. Inama Soave Classico 2009 ($40) goes nicely with the seafood options, and a vertical of Château Beaucastel does well on its own.

Anchoring the renovated Eden Roc hotel, the Fontainebleau's next-door rival, 1500 Degrees restaurant is not quite sure what category it's in. Farm-to-table cuisine? Steak house? Define it as you will, what matters is that chef Paula DaSilva's cooking is delicious; just 32 years old, the Brazilian-American is proving a promising chef.
Her upscale, comfort-food dishes, such as the roasted half-chicken, cheddar biscuits and the warm skillet of white-bean cassoulet, are buoyed by fresh ingredients. If you've packed a bigger appetite, there are plenty of steaks to choose from, including a Florida-raised, grass-fed Wagyu rib eye. The wine list is focused on the steak options, including a lengthy selection of California Cabernets and Bordeaux.


HAKKASAN

Established in London in 2001, Hakkasan chose Miami for its first U.S. location (a New York outpost opened this year). It is the Fontainebleau's most striking restaurant, with an interior of dark wood and blue frosted glass. But the big space is divided into a somewhat confusing labyrinth of sections that can leave you feeling like you're dining in a side room. The cuisine, based on Cantonese cooking, is also striking and a bit intimidating. It's best to bring several friends and ask your server to guide you through ordering a series of variously sized plates. The dim sum platter, full of dumplings, shouldn't be missed, and jasmine tea-smoked ribs and several duck dishes are also highlights.
Fontainebleau beverage director David Mokha and his team built their list by tasting what would go with the variety of flavors on offer. Try Egly-Ouriet Grand Cru Brut Tradition NV ($150) or Rafael Palacios Godello As Sortes 2010 ($95).

Not many things have history in Miami, but Joe's does—almost 100 years' worth. It still serves fresh stone crab claws, paired with classic sides like creamed spinach and mashed potatoes. If you're not in the mood for stone crab, the steak and roast chicken are also excellent. The Key lime pie is a must. It can take forever to get into the restaurant, but once you're seated, the waiters are attentive to your needs. The seasonal lunch is an easier process, and it's not unusual to see Miami's leading politicians and business figures at nearby tables. The wine list is lengthy, and while there's nothing revolutionary, it shows plenty of depth.

Walking into Juvia, you may need to pause and get oriented. Everything is white, and you appear to be hovering above the city. It's not the pearly gates, but a terrace that enjoys one of the best views of the beach. Perched atop the city's most famous parking garage, designed by architects at Herzog & de Meuron, Juvia offers modernist Asian food with Peruvian touches, some of it as lovely as the view. Milk-fed pork confit with kimchi slaw is a great mix of rich fat and tangy acidity. Korean barbecue ribs are a flavorful blast. Other dishes work less well; cold-smoked sea scallop crudo over apple wood bacon is tasty, but overpowered by a spicy Bloody Mary espuma.
The wine list is somewhat Jekyll-and-Hyde. If you want spectacular Champagne or Bordeaux, you're in good hands: The list includes Krug 1998 ($700) and Château Margaux 1999 ($1,980). Most of the selections for less than $100, however, are either mundane or come with a hefty markup.

In 2010, three chefs who had met while working in Casa Tua's kitchen decided to open something South Beach had never seen: an ambitious neighborhood restaurant. Located in the sleepy northwest corner of South Beach, Pubbelly is a blend of New York's Momofuku and the Spotted Pig, with a touch of Puerto Rico. It's a friendly spot, filled with locals who crowd the bar and the butcher-block tables for a variety of small plates. Pig is king here, so try the McBelly, a pork belly slider with kimchi and pickles. Heirloom tomatoes come with an incredibly fresh and creamy tofu, with amazu ponzu. Brussels sprouts are seasoned with a bacon miso and sea salt. The wine list is short and eclectic, but has well-thought-out gems such as August Kesseler Riesling Kabinett Rheingau 2009 ($31) and Vall Llach Priorat Embruix 2007 ($60). If you'd prefer a beer with your pork fat, there's a lengthy list of options, including Saison Dupont ($22).


SCARPETTA

Scott Conant launched this outpost of his New York hot spot in 2008, when the Fontainebleau reopened. The Italian cuisine is some of the best in Miami. Steak tartare with a quail egg and crispy shiitake is clean and fresh, with each ingredient standing out. Fresh burrata with heirloom tomatoes is also simple and lovely. The pastas are perfectly made, from spicy spaghetti peperoncino to chewy pici with lobster and bottarga. This is rich, modern, satisfying Italian food. The wine list is also impressive, from a magnum of Bruno Giacosa Barolo Falletto 2003 ($1,200) to Valdicava Brunello di Montalcino 1998 ($315). If you're looking for something new, try Foradori Teroldego Granato 2009 ($120). There are also plenty of French, Spanish and American selections.

Yardbird isn't the first restaurant to do an upscale take on Southern comfort food. The brick walls, wood beams and cutesy signs will feel familiar (although the pictures of musicians such as Johnny Cash and John Lee Hooker projected on a wall are a nice touch). But nobody else makes a fried chicken sandwich that's as tasty. The batter is spicy and just thick enough, and the flesh inside is perfectly moist. Wrapped in a perfect biscuit with a touch of sweet-and-spicy pepper jelly, this can't fail to bring a smile to your face.
The rest of the food is also outstanding, from fresh green tomatoes with farm cheese, arugula and watermelon to the housemade charcuterie. Housemade recipes are a source of pride here and include the coleslaw, pickles and mustards. The wine list is only one page but is packed with about 70 smart, all-American choices, such as Gruet Sparkling Rosé NV from New Mexico ($39 and made for fried chicken, according to the menu) and Copain Syrah Anderson Valley Tous Ensemble 2009 ($45). There's also a great selection of whiskeys; try the Pappy Van Winkle's Family Reserve 20 Year Old ($33 a glass).

Wine Enthusiast has published its annual Special Collector’s Edition magazine this month, titled ‘Wines of Italy.’

I am happy to report that Castello Banfi has been very well represented in the issue, particularly in the piece highlighting Brunello, where Castello Banfi receives special credit for the huge success of Brunello in the international market. Cristina Mariani-May is designated “The Ambassador” of Brunello, as the editors go on to say, “More than any other producer, American-owned Castello Banfi has introduced the world to Brunello.”

CHAMPAGNE Y FORMULA UNO (F1)

Referencia a mi estadía en el Gran Premio de Sao Paulo, Brasil,  Nov .2012.


Hace unos días tuve el inmenso placer y privilegio de asistir por primera, y seguro que no última, vez al Gran Premio de Fórmula 1 en  Sao Paulo, Brasil.  Les cuento que la experiencia es excepcional, única y repetible! Decidimos tomarnos esta especie de carnavales de 4 días en Noviembre, hicimos una pequeña maleta, liviana en ropa, pesada en ilusiones y expectativas, todas y más que cumplidas. 
Siempre he pensado que todo lo bueno no es casual ni gana la fama de gratis, y es así, en todos los eventos deportivos, culturales y artísticos, y éste caso no fue la excepción. 
Desde que llegamos se transpira por cada poro adrenalina, emoción, ansiedad de victoria, velocidad, ruido que lejos de molestar te entusiasma, al punto que acelera al mismo ritmo tus latidos, tu corazón. 

Desde el mismo sábado, día en que tuvimos la oportunidad de ver los entrenamientos individuales, la llamada pole position, o carrera clasificatoria, y los pits, la emoción nos invadía, la novedad y el agradecimiento de estar allí, la organización y la seguridad, la afortunada locación que nos correspondió ocupar, en fin todo y cada detalle valió la pena.  No quería que el tiempo transcurriera, como quería que se congelara ese domingo. 

Por mi género, no entendía demasiado de las carreras, eso de la F1, en especial, por tv los domingos en la mañana, con ese ruido que parecían mosquitos que me despertaban incesantemente, no era nada atractivo para mi.  Que poco sabía, y que increíble que uno no valora ni aprecia lo que no sabe, ni lo que no ha vivido… Ahora, me encantaría ir a cada carrera, sentir la ansiedad de la victoria, la emoción de cada vuelta, de la velocidad… eso es adictivo!  Ya la entendí, ya no será lo mismo para mi, ya será una remembranza de cuando estuve, una ilusión de estar allí, de volver….
 
El ver transitar frente a ti a Alonso,  a Vettel, a Button, a otros tantos pilotos valientes quienes se juegan la vida cada minuto, conduciendo máquinas casi perfectas a velocidades que alcanzan a veces hasta 300Kms/h, es sencillamente INCREIBLE!... El sonido de los motores, los cambios de velocidad, las curvas, los adelantamientos, las estrategias de equipo, las dificultades que sortean cuando llueve, en fin, todo está tan perfectamente sincronizado que uno ni se lo imagina, ni mucho menos concibe.

El mejor combustible de la carrera es la adrenalina. La clasificación del campeonato en si, estaba muy cerrada, en la tabla, apenas Vettel,  en la individual tenía 13 ptos de ventaja sobre Alonso de Ferrari, hubo momentos que llegó a reducirse la brecha quedando con 1 pto de diferencia. 

 
Mi favorito, Alonso, por ser español, y de la escudería Ferrari.  Hizo una gran carrera, salió de 7mo y llegó de 2do, con un carro, que según los entendidos, tenía sus desventajas comparativas. 

Finalmente ganó Button, merecida victoria, seguido de mi admirado Alonso y Massa, conductor local compañero de equipo.  El público, loco de emoción los ovacionó hasta más no poder.  Yo afónica de euforia, esperaba la premiación.  Quedó de segundo en la tabla individual, de primero para mi…

Llegó el momento de la celebración, como es costumbre la respectiva mega botella de Champagne, la Cordon Rouge de Mumm, Jerobuam, y entonces me pregunté, de donde vino este ritual, que de seguidas les cuento...




La historia de Champagne en la F1 se remonta al año 1950. Se corría el Gran Premio de Francia en Reims, Juan Manuel Fangio ganó, y Pablo Moët Chandon y su primo el conde Frédéric Chandon de Brailes le ofreció un Jeroboam de Moët Chandon. En aquella época, las botellas no se abrían, incluso en el podio.


Fué en el año 1966, y se celebraba en Francia, las 24 Horas de Le Mans. Resultó vencedor Jo Siffert a quien regalaron un Moët Chandon al subir al podio. Sin darse cuenta salió el corcho de la botella de champagne recalentado, mojando a los espectadores de abajo. Al año siguiente, Dan Gurney, en un éxtasis de euforia y alegría, sacudió y descorchó la botella de champagne rociando a todo el mundo que tenía delante.

 

Lo inesperado y original se apoderó del momento, el público acompañaba con gestos de alegría al piloto. Este acto marcó un antes y un después en la celebración ante la victoria de cualquier piloto hasta la época. Desde entonces el ritual se repite.


Hoy en día, Champagne GH Mumm (Georges Hermann Mumm )ha renovado su contrato que desde el año 2000, tiene con la Formula 1, para continuar siendo el Champagne oficial del Campeonato de Formula 1, uno de los eventos más vistos del mundo. En la actualidad son muchas las marcas que quieren hacerse con este contrato, ya que ven una fuente de marketing importantísima, pero ninguna lo consigue.



Desde su creación en 1875, G.H. Mumm Cordon Rouge es uno de los mejores champagnes de origen únicamente francés que se conoce, por su autenticidad y elegancia, y por protagonizar escenas de cine históricas y momentos especiales en la vida de muchos.
En las paredes de "La Maison", son recelosos a la hora de decir todo lo que les reporta la Formula 1 y de la renovación de su contrato. Como dicen en Francia, "le plus grand secret".

Ahora nos queda buscar una botella como esa, enfriarla… correr por las calles de Caracas, y al llegar a casa sanos y salvos, descorcharla por haberle ganado una carrera a la adversidad y a la rutina!

Lo que en agosto se anunció como 10.000 botellas se ha quedado definitivamente en 8.807: ésa es la magnífica bodega de elBulli que la casa Sotheby's va a subastar en abril próximo en Hong Kong y Nueva York, y con la que se espera recolectar más de un millón de dólares a beneficio de la elBulliFoundation, la fundación para la investigación del gusto y de la creación culinaria fundada por Ferran Adrià y Juli Soler tras el cierre en 2011 del que fuese considerado mejor restaurante del mundo.
Las fechas de la venta serán el 3 de abril en Hong Kong y el 26 de ese mes en Nueva York, según anunció Sotheby's esta semana. También hizo público un mensaje de Adriá en el que la describe como "excepcional, única", añadiendo que tras la puesta en marcha de la fundación, "decidimos que esta colección muy especial y personal debía emplearse para hacer una contribución inicial que ayudase a que el lanzamiento de elBulliFoundation fuese un éxito".


La directora del departamento de vinos de Sotheby's, Serena Sutcliffe, será la encargada de dirigir las subastas.


Fue Juli Soler el que creó y nutrió a partir de 1981 esta bodega junto a los sucesivos sumilleres de la casa: Agustí Peris, Eloy Sánchez, Isabelle Brunet, Lucas Payà, David Seijas y Ferran Centelles.


Entre lo más interesante que se va a subastar están unas 2.000 botellas de vinos españoles, entre ellos varias botellas de seis añadas de Vega Sicilia Único (entre 1987 y 1996) y de 10 añadas de Torres Mas La Plana. Además, 415 botellas de diferentes añadas de Château de Beaucastel, cajas completas de botellas y mágnums de Château Latour 2005, y vinos del Domaine de la Romanée-Conti, incluidas varias botellas de Romanée-Conti 1999, estimadas en 5.350 euros por botella, y un lote de tres de Romanée-Conti 1990, estimado entre 25.000 y 36.500 euros.


Entre los vinos blancos destacan botellas de Montrachet DRC, pero también vinos más inesperados: tintos suizos, moscateles de la isla de Samos, jereces, oportos, tokajis y 'icewines' canadienses.


Se ha anunciado también el lanzamiento del nuevo sitio de internet Bullipedia, que informará sobre todos los trabajos de la fundación.


Serena Sutcliffe se ha deshecho en alabanzas y emocionados recuerdos de lo que fue comer en elBulli, con "sorpresa, placer y alegría en cada plato, una incesante procesión mágica". Y añadía: "El ingrediente extra en esas comidas fue la armonización intuitiva de esas creaciones con la tentadora, y fenomenalmente interesante, carta de vinos. Estamos encantados de poder subastar estos vinos para que los coleccionistas de todo el mundo puedan compartir el encanto de elBulli".


Y el caso es que Ferran Adrià siempre confesó que él no pensaba nunca en la armonía con el vino cuando creaba un plato... Pero Soler y sus sumilleres se encargaron de ello.
